    Takeda 240mm gyuto

Sorry, I tried getting a better shot. Unfortunately, my camera isn't capable of macro focus. I haven't been following the knife world closely, so I'm not sure when the new geometry was introduced. However, I've owned this knife for around 3 years now. Hopefully that gives you an idea of what...

You're right, it is the AS version. Here's a picture for your reference

    Takeda 240mm gyuto

Here is a shot of the choil. I'm selling it since it's not being used anymore due to my schedule, I mostly use a SS Shun Santoku since it's less maintanence and I only cook on a small scale, so this knife is overkill. It is 58mm at the tallest.

jNat/natural stone - Ohira Shiage Awasedo polishing stone

Extremely hard stone, 10-16k, perhaps even overkill for most knifes. More useful for razors than knifes. Small 0.2mm deep dimple on the top. It hasn't affected me so I haven't polished it out, but it should only take 5 minutes to flatten out if it bothers you. Purchased for ~$260 USD...

    Takeda 240mm gyuto

245mm specifically. Asking for $350 USD. The knife is 245mm long x 58mm tall The spine is 3mm at the hilt and 1mm near the tip. The blade width at the midpoint is 1mm blade. The bevel is 6-10mm bevel rise depending on how you measure it (see photo). Selling because the knife is overkill for...

    Glass House I'm Working On

You should fit it with Philips Hues lights. That way, you can make your entire house glow purple or green at night, it'll look like a glowing jewel in the neighbourhood..

    J knives changed my life

I'll play devil's advocate. I love Japanese knives, but I can't help but feel like it's not a rational love. Like how suits made in Italy are just "better", it has more to do with perceived image than actual performance. In reality, I'm sure a well sharpened Zwilling can probably take on the...
