    Most reviews for the pre-production Sette are positive. I wonder how the production model will fare--only time will tell. I just got my first espresso maker and am planning on purchasing a Sette when it's out. Hopefully it will be worth the wait.

    +1 for the Toyama. I own the 210mm, and it's a joy to cut with. The knife is sharp and has good edge retention with blue steel, decent heft, and great release.

    Takedas are a delight to use for preparing any tofu-based dish. The thinness and lightness of the blade is fitting for the delicate nature of tofu.

    Aritsugu: Perfected in 1560

    Honestly there are a lot of good options these days for quality Japanese knives. While Aritsugu has a long history, this does not mean they necessarily make the best knives. That said, I do greatly enjoy the Nakiri I picked up from them a few weeks back.

    You can always make them! I think the molds are around $1 on eBay. Also, I'm thinking that fermented tofu or Chinese sausages would make great fillings as well.
