I had a dream last night that I ended up like Jon and left my bag on the bus. This got me thinking about how much I could hustle up to replace everything and what I would absolutely need to perform my job as well as possible. This is what I came up with on a $1000 dollar budget:

Itinomonn 270mm Kasumi V2 gyuto - $227.40
Kochi 210mm V2 suji - $240
Gesshin Uraku 210mm deba - $275
Gesshin Uraku 300mm yanagiba - $220
Messermeister 5 pocket roll - $50
Mac Shears - $59.95
Peltex - $17.90
Kunz Spoon - $11.90

$1102.15 all day

If I really had a hard budget of $1000 I could make do without the yanagiba and cut fish with my gyuto, but that would be uncivilized. If cash was really strapped I would just get the Kochi, the peltex, and the spoon.

Anyone else want to make a list? Make a budget, and you can only put things that are in stock on your list, no Shigs or Markos.

About a year and a half ago my roll was stolen out of my car. Funds were tight at the moment (although I did eventually get $1000 from my insurance). As I live in the LA area I was only about 40 mins from Jki. I hauled over there and picked up the Kochi 240 suji because It does pretty much whatever I need to at my current job. Still made it to work on time, box in hand.

I would blow all my budget on one badass gyuto and borrow everyone else's sh1t for anything else haha. Then slowly rebuild the kit one knife at a time. No going back to budget stuff for me. Fortunately I like stuff that doesn't cost too much.
 
No 240 KS or Ginsanko petty in stock today.
 
If I could have used things that were out of stock I could ha e come in budget easy, knocked 150 off the suji right off by going with the itinomonn
 
Can I just kick myself in the ass for leaving knives on the bus and get some more out of the stash at home?

If I was starting fresh, the Uraku, Kochi, Intinomonn and Tanaka products would be well represented.
 
I'd grab a $25 local Chinese style knife and regrind the edge until I'm happy.
 
Being somewhat conservative, I would get two bubinga knife handles from Isaiah.
 
Great thread! Really made me think about what would I really need in contrast to what I still want (which changes frequently and randomly depending on the rotation of the moon :D)

But this thread all so made me quite pleased with my stuff so far. I was surprised too of how little I would need to be satisfied. :shocked:

On a really tight budget:
- Tanaka damascus vg10 yo petty 15cm 55$
- Tanaka damascus vg10 wa gyuto 24cm 110$
- Masahiro Bessaku yo sujihiki 240cm 76$
= 241$

This is what I feel would be sufficient enough not to be annoyed with my tools of the trade.
I´d be even a little proud of them.


What I could probably stretch to but with still a real world budget:
- Tanaka damascus vg10 wa petty 15cm 55$
- Haryuki srs15 wa gyuto 240cm 238$ or CoSay hap40 yo gyuto 240cm 242$
- Gekko vg10 yo sujihiki 240cm 100$
= 393$
(- Tanaka damascus B2 wa nakiri 165cm 68$)
(= 461$)
This set would make me a very happy camper.

Both these sets would be for a pro environment.

My knife roll I made myself and I´d just make a new one.
Cost of materials was about 80$.

...But then for fun and for home there would be some late additions from few other favourites! :idea:
