    I think it started in Southeast Asia, where fruit + chilli salt is a very common combination. Sometimes they forget to give the chilli salt to foreigners, so you have to ask for it. My favourite combination is with green/unripe mango.

    Don't know what you are after, but if you are not gyuto-focused, then it's worth checking traditional Japanese blades - deba, yanagi, etc. Those are usually of better quality than double bevel ones. Good luck with the search!
