Masahiro Arato 600, Kasumi Marble 400 or Naniwa SS 400?

Well, I went for the Naniwa SS400. It created a burr in about 5-6 passes on my parents homemade HRC 60+ knife.

Masahiro Arato 600, Kasumi Marble 400 or Naniwa SS 400?

So, I am thinking of expanding my minuscule collection of stones. I currently own a Chosera/Pro 1000 and a Rika 5000. I have practiced a bit with those stones and really enjoy working on them. The feel and feedback seems great. But Now I am going to start to sharpen my familymembers varied...

    My aunts Japanese knife!

To be honest, I was more concerned that resharpening and polishing the bent blade would damage my sharpening stones 😂 I can take a pretty good macro of the edge if anyone wants. I do not know the edge geometry, other than that it is double beveled and seems to have equal bevels.

    My aunts Japanese knife!

So, my wifes aunt has knife she bought in Japan in The late 90s/early 00s and, I think, has given it improper care. It shows small signs of rust on the blade, is very dull and the blade is warped near the middle. Is you sight down the edge it has an 'S' shape that deviates maybe 1/5 mm, then...

    A reasonable yet decent workhorse!

No import.. Makes it too expensive with 25% tax, shipping and $15-25 in handling fees.

Takk, but I'll need a faktura :-P One vote for the Masahiro then!

Can`t get a Fujiwara in Norway.. Willing is another brand I've seen. Bit they ate cheap, which makes me suspicious.

    A reasonable yet decent workhorse!

So, I'm new here. I recently got help to buy myself some sharpening stones. Now I'd appreciate some recommendations or thoughts on kitchen knives for my workplace. I work at a Waldorf kindergarten in Trondheim, Norway. We make all the meals for the children (56 kids between 1-6yrs) from...

Hi All, and I've got to ask your opinion!

I'll do the DWSandScreen if my in-laws feel they are carrying enough weight for this round! But would like to support Korin for their helpfullness as well! 😃

Hi All, and I've got to ask your opinion!

Thank you, I will remember that! I've already watched a few from Korin and JKI, while practicing movements on a small bamboo cutting board.. My wife thinks I get too obsessed with stuff too fast!

Hi All, and I've got to ask your opinion!

Well, great and unexpected news! The in-laws are extending their stay, so I called Chef Knives To Go and they guaranteed delivery in time, so I am now the proud owner of Naniwa Chosera 1k and Suehiro Rika 5k! 😆 I sent emails to different companies on Manhattan, but Korin were the only...

Hi All, and I've got to ask your opinion!

Yeah, I've been so caught up in the sharpening stones themselves that I almost forgot about a flattening stone. I can get hold of quite a big naniwa stone here in Norway for about $85, but perhaps better to buy one in NY ^^ What makes a good flattening stone, or will any stone that is about the...

Hi All, and I've got to ask your opinion!

Yes. At least to Norway, which has a bad EU deal ^^ I am trying like crazy to call Chef Knives To Go to hear if their shipping will make it to New York in time, but they are still asleep :P If so, I will go for a Chosera 1K and Suehiro Rika 5K. If not, I would still appreciate some infor...

Hi All, and I've got to ask your opinion!

I have no way of comparing prices since I do not recognize the brand names, but they seem to be a bit cheaper than Norway. But it will cancel out because every order over $60 entering Norway gets slapped with a 25% tax and handling fee of about $10-25. Which is why I would really like...

Hi All, and I've got to ask your opinion!

Unfortunately, the inlaws are only in New York from Friday too Monday. So there really isn't time to ship to the hotel. I did not know they were going at all till earlier this week. That is why I've narrowed it down. There is a shop selling the Suehiro Riku 5k, but they are sold out atm... I...

Hi All, and I've got to ask your opinion!

Hi all, and thanks for the sharpening info I've been reading on this forum for the last couple of days. I am currently based in Norway, which is expensive and small, which kind of limits availability in products. Though this weekend my sister in law and her aunt will be in New York, staying...
