G'day all. Zaphb here. Looking to upgrade knives for home use, and doing some research.

Specifically, opinions on gyutos and debas that sell under $75 on ebay. Just wondering if they're good for home use. Pros, cons, experiences, links to previous discussions?

Scotchef38, yes - I suspect you're right. I'd like to start with something cheap that I can learn to sharpen and care for properly. I try to be utilitarian, but some of these Japanese knives I'm seeing are truly works of art.
