One brand we feel doesn't get a lot of notice, for the quality it represents, is Akifusa. It's also known by some other brands, including Harayuki.

Steel is SRS15 clad with SRS405, to make a great knife, with a classic semi-french profile. The HRC is around 64-65 and hasn't been pushed too far. the combination makes for a durable edge which, while quite hard, doesn't suffer from brittleness. Of course abuse anything and you can wreck it. We've got quite a few people using these in professional conditions and have had nothing but good feedback, both from a durability and non-fatigue view.

The SRS15 doesn't present any problem with normal sharpening and sharpens well with medium to good stones. The handles are comfortable and the whole package comes together very well.

We think these Akifusa knives are pretty cheap for the quality.
