Thanks for all the great advice! I am trying to find info that relates to types of steel or quality material and how to interpret materials used for the best knifes. Also I would like to hear about how the tricks of the trade. Maybe how to polish or grind steel work???
There is more info on the topics you are looking for at the blades forum , you will see more kitchen knives and mostly final products here rather than the progress or which tools to use etc
