Greetings,
I've been lurking about two years at this stage (,I signed up initially to use the search function,) and have found the forum both a fascinating and incredibly dangerous place! I joined with a Global chef's knife and a Victorinox, initially bought a Carbonext gyuto, and now possess half a dozen stones, and roughly a dozen knives.
I've always loved cooking but have had to almost relearn how to cut on discovering what an actually sharp knife is. Now the most relaxing part of my evening is a beer, some music and a half an hour of slicing and dicing for dinner!
