Sharpening Video- Opinions?

I am interested in what members have to say re: this video. Though I have been sharpening knives (hobby) for 45-50yrs, I am still trying to get better. I know there are people here that here that have to make a living based on their results and there are a lot of practiced sharpeners. I would like to hear what you thought are.

I have seek Jon's videos and Salty's videos.

I notice that this guy does not thin his knife and therefore has quite the bevel..

10, 15 minutes per stone? On the edge? I must be doing it wrong.
 

Later (8:22 and 8:56) in the video he drags that tip on the pull cut through a tomato. He is pretty hard on it. I am not so sure this chef uses the tip?

Part of that time may be because he did not appear to be thinning. That blade was fat behind the edge.

In this Murray Carter video he is 2minutes on the 1k and 1 minute on the 6k.
