190mm Heiji Semi - Stainless garasuki - first knife I had commissioned from japan. Double bevel, has a chip towards the heel and a couple of dings further up I tried to photograph. Brought it straight to work with me when I got it so edge was straight from Heiji. Have since put it on a 1k to natural finisher and touched up once or twice. Turns out I do bone in chicken way more than boneless at work so the first time I used it I parted out about 15 chickens and I’m assuming the chip came from going through the ribs/ splitting the breast bone. Western deba came into rotation and worked out a lot better. I’m in $370 total so asking $320 shipped/paypalled conus. Comes with saya.
CCK 1111 - Large stainless cleaver from CCK 235mmx120mm. Got this to try out a cleaver, fun to use but ultimately I find a gyuto more versatile. Sharped 2-3 times on a 1k up to 6k and touched up inbetween on 6k. Tip is slightly blunted. Asking $90 shipped/paypalled conus.
