Don't want to sell this lovely gyuto, but like the other knife I need to fund a wedding ring for my lass.

Birch&Bevel Carbon gyuto 254x55 mm, 195 g. Forged by Fredrik Spåre, gorgeous bog oak, birch, and brass handle by Martin Huber. Monosteel 1.2419 German tool steel.

Forward balance makes it feel a little more substantial than the weight would have you think on paper, if you like Kochi, you'll like this, has a bit more authority than my Kochi 240. Subtle convex for good good release and a nice ~flat~ spot at the back half of the knife, but not dead flat and won't thud to a stop like a Yoshikane. Excellent push cutter. Aggressive distal taper and thin tip but stiff. Took a gorgeous patina at first but isn't reactive after that. Never sharpened, steel has kept a nice original edge. Surprisingly one of my best protein knives. Arguably favorite handle of any knife I've tried and F&F gives a premium feel.

On the spine photo below, it's just a trick of the light+rounded spine, @deltaplex sent me on a goose chase checking it 4 different ways and it is, indeed, true. I can polish the lovely patina off if you want, but I don't want to desecrate it.

If she loves you she'll take the knife over the ring!!!!

(don't do that and plz get a ring that costs more than the two knives combined)
She already got me an Okubo and stone for Christmas so I can't be too mopey about trading hardened steel for more expensive steel that can't hold an edge ;)

buyer got a great knife. This is one of my favorite knives. For the money, is one of the best values out there.
