I was browsing on Amazon Japan and came across this knife which comes in insanely large sizes (the largest they cell is about 22 inches long!)

Can anyone tell me more about why this knife can be so long and does it have any uses other than cutting Japanese sponge cake?

They are used to slice cakes into layers, and are long for the same reason yanagi are long - so that the cut can be made with a single stroke without sawing back and forth.
 
22inches sounds really excessive, but they are more or less just a normal cake knife with a blade. They are used to cut large sheet cakes. I think the reason Japanese people call it a "castella" knives is because castella was Japan's first introductions to cake.
