personally i'd get a victorinox baker's bk and call it done
I've never seen a bread knife that didn't have the serrations ground only into one side, and I've never had trouble slicing 1mm thick baguette for crostini with such knives so steering is, in my opinion a non issue. NOW, if you're going to use the bread knife for things other than bread, ymmv.
