You’re good guy, so selfless! When it's time to toss out the tree after Christmas, lemme know and I'll come by to recycle it for you.

This is thoughtful collection, well done!
That Takeda seems to be a bad influence. You might need something bigger to get them in line.
Moritaka honesuki, right? How do you find it - they look like they should be great and are a good price.
Yes. It’s a great little knife. Flat triangular profile is great for Honesuki. Very robust piece of steel. I took it down to zero and it has held up great. Fun for polishing practice and testing stones. Iron clad but I’ve never had a problem with it. I’ll break down there or four chickens at a time without wiping it off and never seen a spec of rust.Moritaka honesuki, right? Thanks.
Kippington soooo good. Even after everything I’ve tried so far, his stuff is up there with the best. Cheaper tooKip on the board for some broth preparation, such a good cutter, still my top 3 after all the acquisitions.

Mine was too until I realized that if my new knives had to cut as well as a Kip I'd own like... three gyutos. It's a high bar.My Kip is my reference blade that all new aquisitions must compare to
Decided to get all the knives and stones out for a family pic.
