European kitchen knives - recommendations needed

Hi All,

I'm making a trip to Europe, visiting Paris, Budapest, Vienna and Prague in a few weeks, and I have an idea to get an example of a chef's knife from each destination as a memento (yeah I'm running out of reasons to buy more knives ... As if:lol2

Anyway, I'd like recommendations for makers, and if possible, places to buy, in each city.
They needn't be Kato or Shigefusa level necessarily, but something you would consider representative of the better knife makers.
