Classic profile gyuto in 52100 at 62HRC. Stabilised bog oak & birch handle. Convex bevels at 500 grit, rounded and polished spine and choil.

Cutting edge - 240mm
Height - 50mm
Overall length - 396mm
Handle - 145mm
Spine - 2.35 at the handle, midway 1.83mm, 0.68mm at 10mm from the tip.
Edge - 0.15mm at 1mm, 0.47mm at 5mm, 0.84 at 10mm (midway)
Weight 189g
