If I didn't have 2 of the butchers and 4 of the boning forgies, I would probably jump on those. I like having a couple extra when breaking down venison. Just sharpen them before you start and go to town.

Guess I have a problem.

Just out of curiosity what are those handles in? Oak? Ash?

That Butcher knife looks like a really fine example of the Forgecraft brand.
I also have a few old Forgecrafts. I adore the 10" chef knife profile. I need another one, or two, of those.

I clicked on the link to from this thread yesterday to check out the knives. Then just for fun I searched for Forgecraft. Right on top was a lot with the 10" Forgecraft Cheft, 8" Forge Chef knife, 8' Forge Slicer, 8" Old Hickory Chef knife, and a few others. Only had 4 minutes left and was a great price for that lot. I placed my bid and was sniped at 2 seconds to go. The price jumped a bit, so I hesitated that extra 1/2 second and missed it.

Keep your eye out, those 10" ones show up often, but you have to be patient if you don't want to pay up for one.

I was bidding on the same set. Had my max bid set to 40, but spaced on the auction end time and it ended up going for $55, which is probably still a great price. I did manage to grab a 10" Forgecraft in decent condition for $25 though. Looking forward to getting in some great sharpening and thinning practice on this and a few Old Hickory blades, and then having extremely useful knives when I'm done.

Yeah, $55 was still a good deal for about 7 decent carbon knives, including the 10" and 8" Forgecrafts. I was highest bidder at $42 for a whole minute lol.

This one also came off the Bay for <$40 after shipping. Was in good condition with no frowning or damage. I thinned it down and rehandled and now it is a great knife. Many old 10" Forgecrafts are good cutters stock, but this one may have been a little newer, and needed to be thinned. It still cut well with just some thinning at the edge, but now it cuts better!

Is that the stock handle? I love the way the blades on these look, but not the chunky handles, and especially how they're still chunky where the blade starts. None of the ones on eBay look like that...

Beautiful knife! The one I ended up with seems to be in good shape, with possibly a bit of rust. Hopefully not any deep pitting.

Did you do that handle yourself?

That is a custom handle that was installed after the original handle was removed. You are correct, that is not how the knife came originally. You can always alter the original handle with some sanding if you do not like the shape. I have done that many times as well.

Thank you. Yes, I did install this handle myself. It is Pink Ivory with extremely nice color. I hand picked it at a Woodcraft Outlet, which is how I got that nice piece. It has a Black Micarta Bolster and black fiber liners. The colors on the wood got a little darker after oiling (non-stabilized) than I wanted, but I am still very proud of it.

As long as there is not a bad frown in the edge from over steeling or over sharpening, the rust can be removed. I actually check the rusty ones first, because if the blade is full, I can usually get a really nice diamond in the rough for a much lower price than the shiny ones.

Great job! The darker color of the wood is actually my favorite part about it. Do you think it would be feasible to do something like this with just a hand-held drill and sander? Or would I need the table top varieties?

You most definitely can do that with only a dremel tool and some sand paper, but it is MUCH slower, and perhaps not as clean looking depending on how much hand finishing you do. I got my start with a Cordless Drill and a Dremel tool, but my first projects were relatively rough around the edges, and my holes were not straight. If you take your time you can get this done with minimal of tools looking great. Anything motorized just makes it go faster and easier. Just a note, Dremel tools aren't meant for heavy material removal, and I burned mine up in less than a year, so take it easy on the Dremel at first. Use hand files designed for wood, they cut fast and make nicer bevels on the handles too.

These two tools make simple western handles a breeze, but certainly not required.
Drill Press, nothing fancy, mine is 1/3 hp.
1x30 Belt sander, widely available for low cost.
