I've been lurking on and off for years. Lately I've been making enough disposable income to afford the hardware I'd only drooled over when I actually worked in kitchens. This place has been invaluable. Thanks!
The irony of the kitchen knife world -- those who need the best cutters are the ones that have the most trouble affording them.

The thing is, back then I would have still bought the wrong knife... Late 90's, early 00's I was completely ignorant of what a good cutter actually was.

Then I did some cutting with a friend's (still a working chef) Yoshikane. Pretty well made it clear where I'd be spending a lot of $$ in the future.

Yoshi was the answer. The question? I forgot it after i bought this...
