The CarboNext's are in good functional shape. The CarboNext 240 has been sharpened several times, but it needs a little thinning behind the edge. The 240 Suji has been sharpened about twice.
The Tojiro's are beater knives. The 210mm Tojiro DP suji/petty is about the worst knife I've ever purchased. It is EXTREMELY thick, and I spent quite a bit of time thinning down the spine and blade.... but it's still super-thick behind the edge. You can use it if you want to hack through stuff. It's definitely not a finesse knife. The Tojiro 180 petty is much thinner and more functional.
