when wet there is nothing better than ho wood. however, i prefer burnt chestnut when dry. do remember if you dare to experiment you can burn your ho-wood handle yourself with a simple iwatani torch, i would recommend resanding after words tho finish to a 400 grit then oil/beeswax it.

the handle i most sought after was a d-shape burnt chestnut. now that i have one, it's not the end game i thought it would be (but still totally awesome). what i really want now is a d-shape keyaki from watanabe, i don't know if he even offers that however as i've only ever seen octo from him. maybe i should just shoot him an email.
 
A nice chunky octagonal burnt chestnut is actually really impressive. Very stable and purposeful in hand.
Even better if it’s hanging off the end of a Kato Gyuto ;)
