Just want to say hi! I am a home cook with an appreciation for the finer culinary tools. I picked up a western handled Togihgaru a few years ago to get into Japanese knives and in particular learn how to sharpen one. Since then I have picked up a few wa handled knives and now I am hoping to go the next step to custom. Looking forward to learning more and great discussions.
