I have a Victorinox Fibrox boning knife that has a reverse curve near the handle. How do you sharpen that part of the blade? And why is there?

If you round the edges of your stones, you can use the radius to sharpen the curved part.
I definitely don't care about this knife enough to do that to my sharpening stones.

It's there because it's an inexpensive knife. I wouldn't bother to sharpen it at that point. I do stand stones on edge when I encounter recurved blades but I'm not a water stone user so my stones don't suffer in the same way.I have a Victorinox Fibrox boning knife that has a reverse curve near the handle.
