I think the pine cone is my favorite so far. Copper pine cone with musk on ferrule...hmmm.

Banksia pod filled with turquois is pretty cool for those that like gemstone handles.

I'm not sure if it would hold up on a kitchen knife, but aikuchi tanto mounts always look awesome! Horn ferrule and butt-cap with a ho handle covered with ray-skin.

There's a local knife shop here that has a number of handles made of ray skin (though I haven't seen it on their kitchen knives). Has a cool look and nice grip to it. Some are more polished than others.
