For sale is a Northside gyuto with differential heat treat 26C3 (like honyaki, just not forged). Thin convex grind and low tip profile. The knife has been well used, but I have just had it professionally thinned and refinished.

Killer deal for a killer knife. I got to borrow a northside last year and it’s easily one of my favorite knives I’ve used period. Someone got a steal and I love the handle on this one
