Does anybody have a very good simple quail recipe?
 
Season. Wrap in thin strips of bacon. Broil quickly then bake. Eat.

Be aware that quail take longer to cook than you might think.
 
Season, dust in a coating of flour and pecan flour, pan fry. Make a flour gravy from the drippings. Serve over Anson Mills grits.
 
Season, sear in hot pan with bacon or duck fat once browned transfer to oven to finish about medium rare to medium is perfect.

Tarragon cream sauce-

Add shallots and garlic to the pan you seared the duck In. Deglaze with white wine, add chicken base or glacé and then fresh tarragon and heavy cream reduce until thick and season.

Serve over grits, potatoes, rice etc
