well.....last sharpening geek kicked out :) Twistington (Dan) sent away safe and good. what a great guy, he lapped all my stones before he left, that´s like when you have overnight guests and they clean your house before they leave, while you are at work :D

i would like to thank you all for participate and sharing all your knowledge, so great to see you all sharpening, honning, polishing and rehandle. also sharing all your secrets :)
Thank you again Maxim for letting us all try so many knives and stones, teaching my staff to be better sharpeners :D my chefs enjoyed having you all here at the hotel. and not least the great prices. i almost ended up having two Yoshikane SKD 240 suji, if it wasn´t for my chef buying it, i would have bought that for 80$ :D

great to see the pro-shaver/sharpener Birnando (what a collection of razors, wauw) to take the time and patience to teach another member the way to use a stone and get the knife sharp, or Bienik to carry 30kg of books just to show me some of his favorite chefs and dishes :D he did a marathon session with the knife, what a patience and willpower. if we havn´t stopped him and sent him home, he would have been there polishing and sharpening :)

thank you all for the kind words :) and we couldn´t send you home to your wives and girlfriends skinny and thin "rigeligt med smør". so i´m glad you enjoyed the food and beverage. we all enjoyed having you as guests and this was not last time for sure. looking forward to see you all again, next time we have to add another day so i have the time to talk to you all, the time was just not enough.

you are all welcome to come by my work anytime if you are in the neighbourhood or want to have a minibreak. the stones are ready.

apparently it was not too boring..

just great cases with stones and knifes , i think they both belong to one chef.

security was so secretive and quiet like Nordic secret Service :sofa: ?

well, two of the female security guards did a great work to secure the Casino bar and made sure the beverage kept the standard, secretive and quiet, hmm dont think so, say no more ;)
 
I don't know how I should put this in words, but something I texted Niclas a few hours ago was that these few days of knife nerding and stone fondelig has been more relaxing than any four week vacation i have had the last years.

So to summarize this:

I guess Niclas was trying to stuff us with so much calories that if the kitchen should run out of foie gras during these days a random knut could feed the entire restaurant.

Maksim will have a piece of my salary in a not so distant future, there was so many things I wanted to take home but due to some sort of miracle I could hold back on the shopping and settled for 4 knives and 2 stones, Kato 240mm gyuto, Maksims old 240mm gyuto in unknow pm-steel(too cheap not to buy), two practice knives just for fun, Beston 500 and a JNS 6K and I THINK these will be my last syntetics... and ofc the free t-shirt! :)

One of the funnies moments during the event was when me and Bienek didn't believe Maksim that the Kato would cut so well as it did... i guess 5-year olds on x-mas looks sad comparing to how we must have looked when we gave it a try at every veggie they could bring from the kitchen. :D

I would like to end this post with a HUGE shout-ut to all who attended the event, I hope you guys had as fun as I had and I will see you all next time!

I totally agree here and I don't find words to express how happy I am with everything. Big thanks to Maxim, Niclas and everyone participating in the event. I. One back home with two knives, two stones and memories for life. Looking forward to meeting all of you guys again. THANK ALL OF YOU!!!

This wasnt funny! :D But it was very educative. I think next time someone mentions laser knife to me Ill just tell him to go away :D

Great event.

This time there were more people. Great atmosphere, everybody there, was knife/stone-lover, what´s not to like about such an event :)?? Really really nice to meet other people who share my interest, besides the internet, I find it difficult really getting into the topics that can easily be discussed in such a crowd (stones, japanese tools, knives, woodworking).
Maksim is, as always great with his help and wise words. So it is a real treat being at his events, even though I was only there for some hours.
Niclas is a real friendly chap and the whole places has a real pleasent vibe to it.

Great with the early heads up in November Maksim. This time I can take a day off and be there from the beginning insted of showing up after work many hours to late.

Many thanks to everybody involved. Looking forward to the next time (even though it ends up costing me a lot of hard earned danish currency!!!)
