To me that is almost like saying since you use your pocket knife to cut rope or boxes open that it is not worth having a nice sharp straight edge.

There are many uses for a pocketknife.

The steak knife has one designed purpose. But if you use a steak knife as a paring (as some people do), then having a standard straight edge is the way to go.

And a rope or cardboard box is not ceramic.
 
I use Opinel Effile: also 12c27. Thin and elegant. Stainless so I can run it under the tap to rinse off all the sauce and juice that gets into the mechanism. Sharpen it with a diamond 3-stage Ezy-stik.
