-210 Inox Honyaki Kamagata Usuba $350
Never sharpened, only the microbevel has been touched up a handful of times on a 6k.
Great knife, majority of the blade length is flat with the area just at the tip sweeping slightly upward.
Had a lot of fun shaving green onion, chives etc with this one.

Sharpened through a full progression of 400 through 6k on two occasions.
I used this one mostly on Saba, Hirame, Tai, Salmon... no birds.
Blade road is mostly even with the exception of a couple low spots, didn't bug me or
the fish it handled.
I'm also selling my Doi Sakimaru Takobiki which was for sale awhile ago.
I'll have to dig up the thread and bump it but I'm lowering the price to $600.
It's numbered #30 from the Hayate line
On the Usuba and Deba,
Spines are rounded and polished on both but the choils aren't.
They're left a little raw in comparison to the spines but as you can probably see in the photoes they're not nasty.
All knives include sayas and the Doi also has a presentation box.
