These might not be the hypest knife. But they do deliver. The grind on these are absoulte perfect to respective profile. The tosa ground is convex with very thin bte than can cleave potatoes smoothly with no stick and the suji is just slender like a rapier but sturdy. They deserve more and basically very well priced.GLWS
