TAKUMI IKEDA BLUE #2 240 DAMASCUS GYUTO
Up for sale is this nimble little beast. This knife is made with Damascus clad and aogami super core.
The profile is very much the same as Masamoto KS but with nod towards a better grind. Spine and choil are eased. Handle is bubinga plus wenge.
Height at heel is 48mm, which is the sole reason why I'm selling it. I prefer a taller profile and finally coming to terms with this.
A bit about my experience with this guy-
Great convex grind with almost no sticking to starchy veg. Proprietary/horizontal cuts on onions and shallots are like wisps of air. It slices through carrots with SUPER ease. Takes and holds an edge like crazy, notorious for what super blue is known for.
I have sharpened this guy once to open it up, and for kicks and giggles I gave it an etch job prior to sharpening. If it were taller and kept it's ability and charm it currently exudes, I'd be keeping it.
