What Knives Do You Hate to Sharpen?

As for the term "retarded" I don't think that it's insensitive as it's no longer used (or shouldn't be) as a blanket descriptor / label for people with actual brain damage or cognitive disability or disorder.

IMO "retarded" has entered the realm of slang and insults and resides in the company of other names such as moron, idiot, fool, dip$h1t, etc.

Besides, if we can't use the word retarded, what else do we call the rhinochop guy form Johnny B's linked post on FF!?!? (great use of Seinfeld btw!!!!)

LOL. I still pronounce the word that way after hangover.

Anyhow, I used to get a kick out of the old DSM manuals that gave specific IQ ranges for imbecile, moron, and idiot. I think DSM-IV got rid of them though. Here is what they used to be.

"Mental deficiency used to be divided into the following sub-classifications, but these labels began to be abused by the public and are now largely obsolete: Borderline Deficiency (IQ 70-80), Moron (IQ 50-69), Imbecile (IQ 20-49) and Idiot (below 20). Mental deficiency is now generally called mental retardation."

So, what I am saying is that when I sharpen paring knives, I have a 'knife' IQ of about 25. I guess I felt like an imbecile ;)

It's not a sharpening issue, at all -- but does fall into the categories of love-hate and idiocy.

Ever since I got it, my Konosuke 300mm has been my favorite go-to for general prep, but...

I have a really bad habit, established decades ago, of absently mindedly tapping the index finger of my knife hand against the back of the blade, where Europeans forge finger-guards. In the case of the Kono suji, that's the same level as the chin.

Ouch!
