    ridiculous requests

Isn't Bearnaise normally made with shallots, peppercorns and vinegar instead of the lemon juice that's in Hollandaise? I mean I get that tarragon is the biggest difference, but it's not like Hollandaise + tarragon = Bearnaise, is it?

    Smelly wood cutting boards

That would be my guess. I hardly do anything to my board and never have issues. I oil it thoroughly maybe 2-3 times a year and when it's dirty I clean it with a sponge, usually without soap. If the top starts to get too heavily marked, I'll sand it down, but that hardly ever happens because a...

    Help with Restaurant name

I actually think Von Blewitt is a decent name. It sounds interesting and trendy.

On the bench, or what I am up to

I'm in. I don't have a Ealy knife, but I do have Ealy wedding rings: I'd love to get a petty or suji. Ideally damascus. Or a gyuto. Or a line knife. Or a nakiri. Or a ...

    Mokume Gane. my wedding ring.

I finally found the picture of our rings: There's another piece not pictured that fits into the small one to make a full ring. I gave her half as the engagement ring and used the other half as the wedding ring. I highly recommend women who don't care about diamonds.

    Question on debuyer seasoning

I'll echo this. I had a similar issue with one of my first carbon pans where I seasoned it to the point of being black like cast iron. After a few weeks it all came off when I was cleaning it one day, all at once. My other pan looks just like this one and works great. When I redid the first one...

    Do you use non-stick pans?

I never had much luck in my cast iron, I think because they're not quite as smooth, but in a carbon pan all I need is a couple of drops of oil.

    Do you use non-stick pans?

I've never used non-stick. I think I had one pan in uni that I left behind in a move or something because I never used it. For a while I almost exclusively used cast iron, but I'll admit that eggs gave me trouble with sticking most of the time, fish a little bit too. Sauces and the like were...

    Cast Iron Cookware

My family is from the Brockville area on my mom's side. I'd love to get my hands on a Brockville pan. edit: I'd love one of their axe's too, come to think of it.

    Buying a house: ADVICE?

Man, some of you guys have it pretty good. In Toronto, if you include a condition like wanting a building inspection done you may as well not make an offer. Testing for lead paint and mould would be a total non-starter. When I got my place it was basically go look at it at 6 after work, present...

    Buying a house: ADVICE?

I have to advise against the home protection plan. Unless you really, really, want the peace of mind, you're almost always better off just putting the money away yourself to pay for contingencies. They generally don't make financial sense, which makes sense, otherwise why would insurance...

Where in the US would you want to live?

Of the places I've been in the US, Chicago was my favourite big city and Portland Oregon was my favourite place period. Rural Vermont and New Hampshire were really nice too, but probably not that relevant to this conversation. If you're a bit of a lefty with a resume like that and you're...

Wooden kitchen utensils - What do you use/like?

Huh, I've been using a (bamboo, I think) thing for a while that I really like, but have always called a spatula. It's not that different in shape from a spurtle, but it has holes in it which I suppose is so things don't stick or something, but mostly they just get clogged with food and are a...

    Mokume Gane. my wedding ring.

I'm wearing a Del right now. It's great, the predominantly yellow and white gold I chose doesn't have a ton of distinction unless you look closely, but I suspect if you went with more red or green it would pop a little more. I'll see if I can dig up a pic in the next day or two.

I thought small towns were supposed to be safer.

Cities are usually safer than rural areas, it just doesn't seem that way because they're so much more concentrated. Murder and crime rates are lower per capita though. Pok Pok is great! All the food I tried was excellent and I really liked their fermented vinegar drinks too.

    So a perverbial quickie!

Guys, just to be clear, the bend in the tip is very minor. Bending it the other way a couple of times almost completely removed it. Not really enough to call it a flaw at all, I shouldn't have even mentioned it. The handle especially is a thing of beauty. Most times I look at the pictures of...
