    Yoshikane SLD damascus has a great profile and steel. I have the 150mm petty and it's a great knife. Holds its tooth for a long time for a stainless steel.. Looks like epicurean edge has some in stock too. I would love to have that 210mm kiritsuke gyuto!

    @geoff_nocon: Nice contrast on your shig! Here is my 300m Toyama Sujihiki. It is my favorite Toyama knife so far. It has visible jigane folds when seen close up and performs perfectly for my needs.

    I can't believe how much I enjoy my 270mm gyuto. The grind and edge retention is just exceptional. The edge profile is perfect for my needs and what I cut at work. Generous curvature that I'll try to capture in a picture at some point.
