Hello folks, I’ve recently come across some extra money for the first time since I’ve had a baby. Looking to snag a stainless 210 for heavy prep and can’t decide between either:
Masashi Kobo SLD - or- Tanaka ginsan lite from James

I have a 240 KU Tanaka that I love, but curious to try something new.

I had a 210 Tanaka G and liked it a lot, it was a little short for me to prep with. Still have a 240. And just traded a 270. All have an affinity for tomatoes and will eat them all day long.
 
Any love for the Masashi Kobo SLD? Love that flat profile but it’s got that strange tip to it.

I have the 240 Damascus version, actually 250.
I like it lots, but yeah the profile is different.
I have enough knives that I can pick and chose, but if you have a limited number then the Tanaka profile may be more flexible.
But then you do have a 240 ;)
 
If you like tall blades then Masashi will be a good pick. The Masashi I had was a really thin blade, I think the Tanaka would be a relatively thicker blade. I didn’t have the Tanaka Ginsan but I had the R2 in 210mm, it doesn’t have much flat spot and I would go for a 240mm for the Tanaka.
 
I love my masashi. Runs long and tall. Very thin behind the edge. Fit and finish top notch; everything is rounded.
 
Thanks for all the replies. Labor I have a wtb on the Shiro Kamo r2. Might hold off on that for a while. I think I may roll the dice on the masashi. If it’s not what I want I can always snag the ginsan lite from James, he’s practically giving them away at that price. Thanks yall
 
The only Masashi I have is a VS1 petty, but the distinctive edge profile looks similar. Because of the flatter profile and tip design, it feels like it can do the work of a longer blade; I even used it on the line through a service at least once. Had a gyuto nearby but just didn’t have to reach for it, whereas I don’t know if that would work with a normal shaped 150mm petty.
 
Yoshikane SLD damascus has a great profile and steel. I have the 150mm petty and it's a great knife. Holds its tooth for a long time for a stainless steel..

Looks like epicurean edge has some in stock too. I would love to have that 210mm kiritsuke gyuto!
 
I jumped the gun on the masashi from a-frames. It was on sale for 225 plus it has that nice burnt chestnut buffalo horn handle. I’ll let y’all know how I like it. Thanks fam
