EU source for good rice (pref Germany)

I was pretty spoiled in the Ruhrgebiet and Berlin having asian groceries, indian shops and turkish supermarkets in vicinity. Now i try to carry as much as possible when i am in berlin. We also ordered big batch of asian noodles once. It is worth it i would say although not avery sustainable...

    WTS Yoshikane 240mm

Correct me if I´m wrong but the Yoshikanes with this finish are usually SKD12/A2 and not SKD11/SLD. Example Tosho Otherwise let me know where you got this from.

After but i have not done much so far. Stainless cladding is a lot of work and i take my time.

I don't know and also don't care as the steel is really good. That said, any AS i tried has been really solid. One thing i notice is that you can clearly see the core steel at the spine.(zoom in) Something i have seen at other TFs too. Looks handlaminated but i don't know.

    SOLD Western Shigeki Tanaka 240mm

These look like real bargains and at this price especially! Thinking of getting a 210mm as stainless option.

I bought exactly that nakiri and fitted a handle. It is not a thin knife but not too thick either. Mine definitely benefits from some thinning, especially towards the tip. Slowly working on it. The profile is more of a constant curve than just flat. The core steel is rock! hard and the...

    Project knife recommendation

Not an expert but this looks like a cladding line to me if I´m not mistaken so I´d bet it is indeed an iron clad version. Most of the new offerings seem to be 52100 mono steel which should make a nice project knife. Other than that I´d suggest a monosteel SK steel knife as project knife. These...

That is weird! 52100 has >1% carbon and is far from being very reactive. I love mine for those reasons. Develops a nice patina but is easy to care for. Maybe you have a knife that is not monosteel but with iron cladding? I would bet on it! Most of their recent offerings seems to be monosteel so...

    Mazaki

Not sure you´re looking for 240mm,210mm etc. but this shop in germany has a 210mm KU with the same profile (by the looks): mazaki-white-2-nashiji-gyuto-210-mm You could send it on to the handle maker afterwards?

    Knife findings

Of course not and hats not what i said; ignoring the last sentence which was half a joke. He might not be and i hate judging but he is using aggressive marketing to move his stuff fast. And i seriously doubt the quality when i see a santoku made out of B1 steel with a fancy handle below 100$...

    Knife findings

I am more worried about how the bladesmiths manage to turn a profit with greedy distributors like that. Or better how the bladesmiths adjust the quality long-term to be able to make blades at that price. It is real easy to see that pushing prices further and further down is neither good for the...
