    Shrinking Handle Scales

So after not using my Fujiwara Teruyasu cleaver for a couple of weeks (and one international plane flight from NY to Australia) I pulled it out to find that the scales on the handle have shrunk quite significantly. On one side there is now roughly 1mm of exposed metal on both the top and bottom...

    Straightening a Cleaver

Thanks everyone, seems like I should probably just leave it alone, definitely don't want to make anything worse. The only possible performance impact I have detected so far, and I'm not sure about it, was a slight amount of wedging in very thick sweet potato (wedging occurring only when...

    Straightening a Cleaver

I couldn't get a good picture of the other side but it has a matching convexity which definitely indicates bending.

    Straightening a Cleaver

Couple of photos. Sorry about the quality, hard shot to do with a phone camera. You can see how the ruler touches the knife at the spine and near to the edge but not in the centre. I'm aware that TFs knives are rustic (to say the least) and I do not consider this to be a concern...

    Straightening a Cleaver

So I just got a new Fujiwara Teruyasu Chinese cleaver and there is a very slight bend in the blade. The bend is what I would describe as parallel to the spine, so the spine and edge are perfectly straight but there is a slight concavity on the right hand side of the knife and slight convexity on...

    Xerxes Primus - Australia

No experience with Xerxes in particular but I have had packages delivered from overseas to Australia via DHL before and DHL has always done it the whole way, no passing off to auspost or anything like that.

    Show your newest knife buy

Yep, extra thin again. Seems to be pretty consistent with the last one. The profile might be a little flatter, or at least the flat spot is in a more natural position, which is nice. The right hand side (when holding the blade to cut) does seem to be slightly concave (about 1mm inwards at...

    Lost TF Cleaver

I am hoping that someone just took the bag by accident and will hand it back in at some point, but it seems unlikely. The thing that annoys me the most is that anyone who finds the knife will probably have no idea what it is and just sell it at a pawn shop or on craigslist for like $20...

    Lost TF Cleaver

So I can't believe this but my brand new Fujiwara Teruyasu custom cleaver was in my bag which went missing from a coach between Ithaca and NYC earlier this week (see the knife about halfway down here: http://www.kitchenknifeforums.com/showthread.php/7655-Show-your-newest-knife-buy/page980)...

    Rust in the kanji

So the stamped kanji on my new TF cleaver appears to be rusting. I presume this means the kanji is stamped deep enough to get into the carbon steel in the core? Is this a problem? And is there any good way to prevent this rusting further.

    Custom Cleaver Saya

Just thought I'd update in case anyone else is looking for a similar saya in future: I decided to go with Isaiah Schroeder. Just a plain poplar saya, non-friction (pin) fit. Very happy with the apparent quality and price: (These are Isaiah's photos but I just received the saya and...

    Opinions on TF cleavers?

Can't really comment on the over grind issue since I only just got mine and don't have enough experience (though visual inspection doesn't show up anything I can see). But the Nashiji I got made extra thin was only 40,000 yen (same price as on the website), I didn't want any other changes though...

    Custom Cleaver Saya

In the cleaver's handle? They don't appear to be brass, they are a shiny silver colour like polished stainless.

    Custom Cleaver Saya

Having just received my TF Cleaver in the mail I'm thinking about getting a Saya for it. I intend to be travelling around with it quite a bit and a saya would make things a lot easier. Looking for recommendations either for a premade saya that would fit it (225mm Long x 110mm High x 2.5mm at...
