    Teruyasu Fujiwara personnel change?

How do you order the custom option off the site? I don’t see it anywhere, then again I don’t read Japanese. Very interested in a White 240, but not looking for it rough finished.

    misen knives

Seems like Aus10 steel is not the problem here. A perfectly well performing steel at much more than that price point if the knife is ground well and the steel is heat treated properly.

    Changing beliefs about knives

Used to think cutting on anything outside of end grain maple was reasonably considered abuse. Super super dumb.

    M390 - sharpening recommendations and/or progressions?

I’ve found s30v, d2, R2, xhp... to sharpen pretty routine. As pleasurable as white 1/aebl? No, but very doable. Have to be a bit more purposeful with burr removal but beyond that it’s no big deal. Zdp just takes longer to grind, m390 was a little tough to get a burr to form and remove. S110v...

    M390 - sharpening recommendations and/or progressions?

Generally steels with 4 percent vanadium and less are doable with regular sharpening stones. Above that and the vanadium carbides make it pretty miserable without diamonds. I’m just parroting what I’ve heard, none of my own science there. But...in practice it has seemed true. M390 is right...

    M390 - sharpening recommendations and/or progressions?

No experience with the 5k. I have the 320, 1k, and 6k. 320 moves a lot of steel but wears very fast. It cuts much faster than my Chosera 400, but I mostly use the Chosera because it holds its shape. Do use it for major thinning jobs. It definitely cuts PM steel. The 1k and 6k are my go to...

    M390 - sharpening recommendations and/or progressions?

Cerax 1k and 6k have both been very effective for me on m390/20cv/204p steels. The 1k especially raises and removes a remarkably clean burr. Big fan of both stones.

What were your first three and last three J-knives acquired?

First three were Fujiwara Fkm 240 Gyuto, Hiromoto G3 120mm Petty, Tojiro 270 bread knife. Bought the Fujiwara and was sure I could never spend that much money on a knife again. I want to say that was 2011-12. Last three were Katsushige Anryu 300 sujihiki, stainless clad AS (tried to sell due...

Maumasi Smith & Bard monosteel collection

Has to be the influence of the Joe Rogan podcast right? He was on it, Rogan occasionally uses one while other guests are on. Show has a wide reach, has to be driving up the price with non knife folk. If this has been discussed to death in other threads, and operating as an underlying assumption...

SOLD Watanabe 240 Gyuto iron clad; Konosuke Ginsan 270 gyuto wide bevel

First up is a Watanabe 240 gyuto kasumi iron clad. This one is well used, has been thinned. 242mm on the edge, looks like a hair less than 54mm tall. 242 grams. My absolute favorite cutter, best knife I have. I am selling because I am going to roll the dice on a stainless clad one. Asking $270...

    whats the verdict on zdp?

I found zdp in the kitchen to be similar in performance attributes to TF white steel. Way harder and less pleasurable to sharpen, but would microchip in similar scenarios. It would just keep its edge way longer. I just like to sharpen so this isn’t necessarily a huge plus for me. Oddly enough...
