    Knife Raffle for Track Team

So Hoss.... shall we all hope for another raffle at the end of this month? I'll personally guarantee to enter 2x as many entries if you offer up another beautiful Damascus. I'm ready to go! Heck, I'll put up 3x the entries that I did last month. Please make this possible. Thanks.

    Knife Raffle for Track Team

You know, Hoss. If you did a single drawing like this every month, you could probably fund the entire school district. You should have them name an stadium or library after you. Put the "Devin" logo in front. (I just realized that I said "stadium" before "library"... that shows my...

210 and 225 ITK Limited sign up

Perhaps this is a really silly question, but can I get in on this order anytime soon? Or ever? Looking to add a 3rd DT to my lineup. Thanks! (And get well Hoss!)

    ******** Fanatic

Agreed. The heat treatment on my ITK does kill everything else out there. Will DT ever come out with his cleaver again?

    CCK 1303 or CCK 1103

The Shibazi cleaver that I have is heavy and sort of cheap. The weight allows it to cut bones or heavy tissue, but it is worthless for vegetable cutting. I'll use my Fanatic for the veggie work (if I'm not using a Gyuto). If you're looking for precise chopping/mincing, don't bother with the...

    ******** Fanatic

Agreed. I love the edge that my AEB-L Fanatic holds for the price. A great buy if you dig cleavers.

    Kramer/ Top Chef

Good video. I was starting to wonder where Bob was going with his story, but a good one.

    Kramer/ Top Chef

Oof. That's a very obscure reference to Jorma Kaukonen, who used to play with Jefferson Airplane. Although I've played guitar for over 18+ years (now retired), I wouldn't say that Jorma would be in my top 100 of all guitar players. Totally off-topic. Eddie is still God to me. Here's the...

    Kramer/ Top Chef

And the winner gets one of his 8" customs. They've priced it at $4000. I saw him and went "Holy ****!" and the GF said "who's that?" She's so silly. My question is: When is Hoss (DT) going to be called on? Only seems right to call Eric Clapton up on stage if Eddie VH was invited first.

    CCK, Old Hickory & in-laws

I'm not sure if they're still there (at least from last weekend's visit to Chinatown). But there's an open indoor market at N. King St. and Kekaulike St. that had a few cleavers for sale there. I don't recall seeing any CCK models, however. I know that a certain knife sales site isn't welcome...

    Media Sushi dreams

Not sure if this has already been mentioned, but that El Bulli documentary (the one entirely in Spanish) is available on Netflix Streaming. Great insight for those who are curious about the legacy of the restaurant.

Sharpened my first knife with the Edge Pro.....wow!

No offense meant by this, but I got a better understanding of sharpening by abandoning my Edge Pro and switching to stones. The edges that I now obtain on my knives are not the world's best, but are far superior to anything that I could get on the EP. So while the sharpening bug bit me while...

    Kramer line of stones

I agree. I went to the Vegas Sur La Table store to check it out and they didn't have any of the individual stones or that bamboo bridge. Instead, they only sold the complete kit which I wasn't about to purchase. Individual pieces seem to be available through the website, however. Still not...

    Media Sushi dreams

Just saw it this afternoon. Fantastic documentary and great footage of Jiro + family. I actually found his praise of Joël Robuchon admirable. Saw some great knives being used in the kitchen. I can't say what they were, but it was a great movie. Catch it if you can.
