I think I can see it now in this other picture I had.

    Japan Trip Review (Fujiwara)

I had ordered ahead, but switched from the black handle which I initially ordered to the red handle once I saw them in person. I was lucky they had some in stock at the time. I didn't even know the red handle was an option, and as they told me it signified a knife purchased in person at the store.

    Japan Trip Review (Fujiwara)

If you do not order it ahead of time, then you are subject to whatever is in stock at the time at the shop. They had a decent amount there, but it would be rolling the dice so up to you.

    Japan Trip Review (Fujiwara)

Here are a few pictures from the shop. I also mentioned that I was trying to become better at sharpening, and I asked if he could give me any advice, which I would greatly appreciate. I had brought both of my Maboroshi knives, which I had already sharpened. He was happy with my job but pointed...

    Japan Trip Review (Fujiwara)

I spent a couple of weeks in Japan this summer (which was very hot and humid). I had a great time, traveling to Tokyo, Osaka, Kyoto, Nara, Shirahama (a Beach Town), and Koyasan. It was an amazing trip filled with lots of interesting culture, food, and knives. Now, about the knives. Prior to my...

    240mm equivalent of takamura R2?

https://knife-gallery.com/?pid=108105032 Shibata R2 240mm Koutetsu. I purchased it when compared with the Takamura due to the longer length and WA handle. I have been very happy with it. I bought my parents a Kei Kobayashi 210mm, but he also makes a 240mm. It's just as nice as the Shibata with...

Knife rack recommendation for carbon knifes?

I have a walnut magnetic knife rack from Wooden Magnetic Knife Holders | WooDsom and have not had this issue at all. I just ensure I wipe the knife dry prior to putting it back on the rack.

Visiting Japan, TF and Takada no Hamono

Great information. Thanks for the heads up! My plan is to leave the knives at the hotel, and I was not planning on bringing an EDC. Looks like I need to do a bit of research on how to transport them on the Shinkasen to and from Osaka\Kyoto\Tokyo

Yes, I know the one! I saw it on Reddit and it was part of the reason I reached out to him directly. I will link to the video below in case others are interested.

This is the one I found. From the map view, it doesn't really look like a store. I think the best bet is to email them and ask.

    Takada no Hamono Blacksmith Question

I just mentioned that I would be traveling to Japan, I told him I was interested in a Gyuto and if it would be possible to pick one up in person. He asked which steel I preferred. I asked him what his favs are and he mentioned Blue 1 and White 2. I choose 210mm Blue 1 with a Rosewood handle. He...

    Takada no Hamono Blacksmith Question

From what Mitsuaki-san told me on IG, Tanaka forges Blue 1 and White 2 ( He mentioned they are his favorite ) and the rest are by Nakagawa. I recently ordered a 210mm Blue 1 non Damascus Suiboku which I will pick up in person next month.

Yes my mistake. I am thinking of Konosuke. Good to know if its a bad idea to ask about the thinning.

Visiting Japan, TF and Takada no Hamono

Hey Everyone, I will be visiting Japan next month and have already planned to visit some blacksmiths and sharpeners. So far my list includes: Teruyasu Fujiwara - I ordered a "thin" 210mm Denka Gyuto. Miho assured me that he would pick the thinnest one they have available. I already have the...

Hello from Vancouver ( Here now due to reddit Chefknives closing )

At the title states, I enjoyed cruising the chefknives and sharpening subreddit. I am relatively new to this hobby, only purchasing my first Japanese knife last year. So far in the collection I have the following: TF Maboroshi Gyuto 210mm - Purchased from local Knifewear store. The knife just...
