Two weeks ago I bought a tamahagane 240 mm gyuto and today I finally used it all day and I am pretty happy.
Not so sharp ootb but the ballance it s vary well done.
Perfect for cutting onion, chop garlic and cut down 4 pumpkins.
Tall enough to go thru big veggie and thin enough to make fine cut.
Tomorrow I will use it to cut protein and next week I will put it on my choseras stones to give it some extra.
 
I have used the 21cm VG-5 gyuto and sujihiki. Really nice knives, thin, light, sharp, with 'luxurious' fit and finish. They can become very sharp. I don't remember if they had eased or rounded spine
