Looking for a workhorse gyuto in good condition around 240mm....brands Id be into are mazaki, gengetsu, kochi, yoshikane etc... something along those lines and sub $250 USD. Thanks!
 
Arguably the best knife available to you for anything near that amount is posted right now by @Barmoley. That Catcheside FG gyuto is a a screaming deal.
 
At that rate, you could afford something pretty decent brand new.
 
I have an Itinomonn StainLess 240 gyuto that has seen just a very light home use for a few months that would fit your budget with ease including shipping. Shoot me a PM if you are interested.

Coming back to this, I am not sure you could do any better than the Yoshikane White #2 knives that Craig at Carbon carries:

They run pretty true, if not a touch long, so 210mm might be a solid option to save you a touch on budget.
If 240mm and $250 are HARD numbers, then I would say Wakui is your man. Lots of places and options, but here are two good deals from solid shops. Do not let prices fool you: Wakui makes excellent knives that are some of the best cutters around.

- If you want knives that are clean and with superb f&f, James' shop is tough to match

If the price point opens up a touch, you're in Toyama, Watanabe territory.

Thanks for the links and guidance on where to get what I am looking for! Still looking on here to see what is available so if anybody has something within budget that fits the bill hmu!
