Hi all –
Going through a large sell off toward shifting priorities in my collection. I am open to trades, but am extremely picky and would likely be interested in higher-end stuff only. I am a home cook, so most “uses” are no longer than 10 minutes to make dinner for one. Nothing has been sharpened more than once.

- Shigefusa Kitaeji gyuto 210mm ( I have other things to trade for this specific item )

Heiji spicy Swedish yanagi 300mm w/ saya
This has been used 2-3 times to portion raw and boneless proteins. Very stout blade. Saya is from Heiji and perfect fit.

Toyama Noborikoi Kasumi gyuto w/ custom handle 270mm
Lightly used, touched up once on a maru suita. Absolute beast of a knife, but I recently purchased a 210mm, as I am not a tall man. Gorgeous Tasmanian handle with dual copper spacers. This will be tough to track down with Toyama switching to stainless clad.

Shigefusa Kitaeji yanagi 240mm (SOLD)
This has been used about 5 times to portion raw and boneless proteins. Gorgeous pattern and no patina.

Watanabe honyaki Blue 1 gyutohiki 225m (SOLD)
At 45mm height, I consider this a gyuto, but many see it more as hybrid. Steel is Blue 1A, as Shinichi calls it. Super unique.

You may consider this new, as it was used on two test cuts of a cucumber. Would come with Konosuke saya and is of original Fujiyama line.
