Here's my first use of the Sansaire....
82 hours at 130F.
Cool water bath, followed by an ice water bath...
Reserved liquids from bags, combined with stock, rosemary, thyme, Worcestershire, lemon juice...reduced by 80%, then thickened with a little corn starch.
