Hello. I am a knife enthusiast and sharpener from Pensacola, Florida. Former sous chef at a high end restaurant and now I just spend my time with my kid and in my shop so now primarily a home cook. I love a good gyuto but am a big fan of nakiris. Nice to meet you all.

Hey foody! Hey guys!
Almost all of my nakiri experience is from customs. I've repaired quite a few Shimos and have checked out a Megumi before. I tend to prefer a middle weight grind. Anything with a thin edge, enough chunk so it doesnt suction cup and a thin tip. Even my nakiris i horizontal through onions a lot so I always look for a thin tip with minimal flex 😁

Hey guys. Most of my nakiri experience are from custom makers, though I have messed with a few Shimos and a Megumi nakiri. Used a Kono hd2 gyuto as a daily driver in a pro kitchen for 3 years and messed around with a few wide bevels. Looking forward to talking knives with folks.

I was the pastry chef at Iron and then got promoted to Sous. Then I had my first child and demoted myself to preo cook to spend nights with my lil boy :)
