Thanks

I have a 1950s la trompette knife that needs some love.

Don't do it. Those are birds-eye rivets, and were only on the earlier three-rivet handles. The thin bolster is another give-away that this is an earlier version of the slab handle.
They look fine to me--plus no cracks in the handle, handles sits flush against the ferrule, wood looks good.
Profile looks nice too. My suggestion would be to put some time in for a good amount of thinning.

US paper money is ~156mm in case anyone is wondering.

So yeah, as Mr. McMan said those are birdseye rivets. I don't think I've ever seen 'replacement' rivets such as those. From the color in your photo they look like brass. So brass washers and brass rod, with the rod fitted tight to the washers and then peened over slightly. I've never done that repair and frankly don't look forward to trying it. Hopefully the other side is as complete as the side we're shown.
As also said that handle look to be in pretty good shape for it's age. I'd suggest a little, light sanding followed by polishing/waxing to rehab that handle.
You could also relieve that heel just a bit to get the edge straight but if used as a slicer that protrusion wouldn't be much of an issue anyway.

It is basically the same construction as a straight razor pin up. I would take @McMan 's advice and not remove that handle. Rare and old and not in bad shape. But definitely brass rod bar stock and brass washers like @Ericfg said, not rivets. Tough to peen the mushroom as good as those old timers. But if you still want to go at it I would search a straight razor site like badgerandblade for good tutorials.

Don't worry. I just sanded everything 1000grit and 2000 grit on blade. What is the best video or information on thinning? I want to learn how to do it. I also have a beautiful lamson 1950s that needs thinning.
