My name is Henri and I'm new to this forum although not new to kitchen knives. Got into them shortly after discovering folding knives. It turns out I don't use folding knives all that much in my day-to-day life but I enjoy cooking with my girlfriend so my love for knives quickly expanded to kitchen knives.

I don't have a crazy collection of knives yet, in fact, I just have a Global 8" and a Konosuke Fujiyama 240mm in Blue #2 which I love using. I do have 4-5 gyutos I'd like to pick up shortly as I'm finally completing my PharmD and entering the workforce this summer. In addition to using knives I really enjoy sharpening them. Currently using stones from JKI (Gesshin) but I'd also like to get into some JNats soon as well but to be honest I'll have to improve my skills a little bit before then.

Im looking forward to learning more about kitchen knives on this forum from everyone.
 
Welcome to the forum and I like your taste in knives already, I have the Konosuke Fujiyama Blue #2 in 210mm Gyuto. I should have purchased the 240mm when they were available a few weeks back but, my wife has indicated that buying 10 Jknives in the past year might be getting excessive (and I want to save grace for when I buy the Kato)

Yes I do love my Konosuke. I actually hope to own one of their honyaki blades at some point as well. Also, you have an amazing wife if her limit is around 10 knives per year lol. I'm with you on the Kato as well, its actually at the top of my short-list, along with a Denka no Hoto and a Bill Burke. All in good time I suppose.
