Hello. I have been into japananese carbon steel kitchen knives for about two years now. Started out to get a couple of new kitchen knives, then it quickly became a bit of an obsession. It's a collection now, but I try to use them all.

Man! Great lineup ... where do you usually buy? I read about a store in Stockholm when I was there last time ... don't remember the name though
 
Nice collection, I don't feel so bad with my 6 gyutos and my desire for a heap more.

And like yourself, I find myself essentially collecting them, but still trying to use them all occasionally.

Bought many knives from Cleancut and they have a store in Bromma, Stockholm so maybe it's them you think of? Also bought a lot of knives from JNS. Bought a couple of knives from Slipstenar.se as well. And recently I have been purchasing knives from CKTG.

Welcome! Which kind of stones do you use to sharpen your knives?

Currently, I'm using some stones from JNS. I use the JNS 800 to get a sharp, but rather rough edge. Then I jump straight to JNS 6000 and sharpen on it until the edge gets smooth enough for me. Lately, I've been practicing some light thinning with the JNS 300 and I'm probably going to use that stone more often when sharpening those sometimes crappy OOTB edges. ;)

I'm glad I can make you feel better. ;)

Gyuto 240s are my favorite "knife class", although I have a bunch of santokus, nakiris and pettys as well. What I like about the gyutos is that they are large enough to be able to show a lot of different flavors in profile and geometry. Great from a collector perspective anyways. :biggrin: Though I still haven't been able to decide what type of profile/gemoetry I like the best...

If the dollar continues to gain against the Krona I might visit Cleancut on my next trip.

I work for Sandvik so I'm traveling to Stockholm, Sandviken and Gimo quite often...
