    I am a sustainable sushi chef in Seattle with over 24 years in restaurants. 15 in fine dining and 9 behind the sushi bar. Growing up in Texas I learned how to butcher fish at ripe age of 7. It also taught me the importance of a sharp knife. Was a member 10+ years ago on FoodieForums(Moderator) and Knife Forums. I was part of the team that helped develop the Hattori FH series and did the technical sketches for the knives.
    These days I prefer no frills knives that are just straight up great performers. All about single bevels and even my western style knives are ground 99/1 or 90/10. I'm starting to really dive into J-Nat stones too. I love the mud!
