    UK Stones

Looks like a turkey stone to me. What is the sound when sharpening a knife on it? Is it ultra fast and has a crunchy sound?

    Favorite non-Japanese natural stones?

As for a touch up: Dalmore Blue, BBW, La Lorraine, Washita, Shapton 4k, Naniwa Professional 5k, Turkey Stone, Magog, Hindostan, ... everything that is fast with slurry but does not create a big burr, but only a fine one.

    Favorite non-Japanese natural stones?

don´t think that the BBW is different to the normal Coticule. Ther garnets size is a bit coarser and not so concentrated and packed as with the Yellow Belgian Whetstone. But the range exceeds 4000 in my opinion and is more likely closer to 6000. At least the specimen I own. Who cares. Sharp is...

    J-Nat Club

enough knives around, mostly in shirogami2, 1, aogami 1 and 2, some SG steel, and Ginsan. But I would like a stone that gives me good bite but does not take off too much steel when sharpening. I don´t want to go through the 1000 / 5000 routine every time. Touching up with the Naniwa 5000 or...

    J-Nat Club

Hi fellow J-Nat-Lovers I would like to know if any of you have experience with different hardness Ohira Renge Suita? I would like to get one as a finisher for my guytos (white 1 and 2, blue 1 and 2, ...), does not necessarely need to be a from Ohira, but they are recommended a lot. I was...

    Tanaka Yoshikazu from JNS

A much smaller factor i think. I always wanted to have a knife in Shirogami #1 - from the collectors point of view. I doubt that Shirogami #1 is the perfect match for gyutos, maybe more suitable for knifes where you treat the blade cautiously (Yanagiba etc. ) and where you don´t get hard contact...

    Tanaka Yoshikazu from JNS

Went for the Tanaka 240 - Shirogami 1 / close out sale. I will keep you informed, as soon as I will get the knife. Hopefully Maxim closes them out for not moving fast enough, and that there are no other issues with the blade. Shouldn´t it be satisfying, I am gonna try to return the knife. A...

    Bought Carbon cleaver

I might suggest Pallares Solsona Carbon Cleaver, I do not own a cleaver but a chefs knife and they work the carbon really great. For the money, you won´t get any better maybe. have a look at bern., i think they have them.

Shirogami # 1 - Fujiwara Nashiji vs. Fujiwara Maboroshi

couldn´t find any better words. It is all about the sales. with games like these, they might sell - but not to me!

Shirogami # 1 - Fujiwara Nashiji vs. Fujiwara Maboroshi

Never had a TF in my hand, so I can´t judge the value. But it seems strange, that there is no definitive answer to the question. If the Nashiji and Maboroshi are equally, why spend nearly double for the Maboroshi line? Ok, I understand that there are more steps involved in making the Maboroshi...

Shirogami # 1 - Fujiwara Nashiji vs. Fujiwara Maboroshi

So I might have a look at the sales section of JNS? That right? :)

Shirogami # 1 - Fujiwara Nashiji vs. Fujiwara Maboroshi

to cite more: "We do the same forging, heat treatment and sharpening for all our items. We are making Nashiji knives as "entry model". From the other view point, Maboroshi is "deluxe edition". The difference of the quality between Nashiji and Maboroshi is slightly." what a bummer!

Shirogami # 1 - Fujiwara Nashiji vs. Fujiwara Maboroshi

So when it comes to choices: Who else forges white #1 guytos with very good heat treatment and has nice grinds? Matsubara (tall)? Nishida (too little taper, from what I can judge by pics), Kenji Togashi (maybe the best choice)?, Goko Hamono (just does not click with me), I am running out of options!

Shirogami # 1 - Fujiwara Nashiji vs. Fujiwara Maboroshi

Yeah, the information was given to me by Gaku if I remember his name correctly. So still not wise. Who came up with the story of in-house forged and prelaminated anyways? So @Corradobrit1: you have the versions from the past? :) Anybody else can share his / her experiences?
